Now that I’ve been cooking from my older and favourite paleo cookbooks, I had to revisit Diane Sanfilippo‘s Practical Paleo. Her recipes are very simple, and her spice mixes invaluable. I always have a few jars with the flavoured salts in my pantry. I found it a bit hard to fit the recipes on my current eating plan, but managed to make several of them. These are the ones I tried on week 1:
Chicken liver paté: I’ve always loved paté but don’t always like the commercial/restaurant ones. My friend Richie’s recipe is my go-to, but this one comes in second place. It’s smooth in texture and flavour. Very enjoyable.
Lamb chops with olive tapenade: This recipe features the Greek spice blend that goes perfectly with the chops. Yes, tapenade is Italian, not Greek… but the combo is a killer.
Bacon & egg salad: This recipe comes with a fail ☹ I saved bacon fat for several days to make the baconnaise but the mayo didn’t work. I wonder if it’s the fat content in Australian bacon. Anyway, I made regular mayo with macadamia oil to use in place of the baconnaise for this recipe. I felt it could use more mayo, but was tasty regardless. Yes, my bacon looks pale in comparison to the book photo… I guess I was too hungry to wait until it crisped up.
Chorizo meatballs: Again, another simple recipe with a very useful and flavoursome spice mix. We ate the meatballs with coleslaw.
Indian-spiced turkey burger: This is the only recipe that I could make for the low-fat days. I used turkey breast mince, and we ate the burgers with lettuce, tomato, coriander and mustard. I felt the flavour a bit mild for my taste.
